What do you use for a palate refresher? I've recently been trying some different things (like drinking Pelegrino), but I want something that refreshes my mouth after tuning espresso in and such....

apples, gala or red delicious, not too ripe
apples in water & lemon juice. animal crackers.
As in, literally putting sliced apples into water?

perhaps this is amateurish of me to suggest, and I am expecting that someone with greater knowledge will tell me why this is a poor palate cleanser for coffee, but would cheese work? I thought it is sometimes used with wine for the same reason, does it not work with coffee as well? or would it be more like a pairing item, enhancing certain notes in the coffee rather then clearing the palate?
i would stay away from dairy. it tends to coat everything, blocking receptors.

ah, yes, good point about the dairy.

and waiting for the coffee to cool is something that helps me taste things in the coffee I would have otherwise missed, since we can taste better at closer to room temp, which is why we like our bad coffee piping hot, and our cheap beer ice cold! haha

Word to the S. Pellegrino.
Plain crackers work well. Carbonated Pelegrino competes with acidity in espresso.
a light ginger ale; super yums after some 'spro.
i use the saltines, aaron. works every time.
sorbet? 1 oz
Well if you sniff roasted beans to refresh your nose after testing perfume; does that mean that squirting perfume in your mouth after 'spro refreshes in the opposite kind of way?
