I'm trying to do some cost estimation for my start-up and wondered if anyone could give me a general idea of how much an installation of a few sinks will cost. The water lines in my proposed location are directly underneath where my bar will be, so the actual "extraction" of the lines shouldn't be difficult. What I need installed behind the bar (according to Illinois code) are: hand-washing sink, 3-compartment sink, and a mop sink. I will also need a drain installed. I realize this is a fairly specific question, but if anyone out there could give me an estimate range, that would be great, as I have no clue!

THis can vary especially if you look into new or used equipment. Best bet is contact a plumber in your area and see what they can offer you. Double check used resaurant equipment in your area too. You might have to put a little elbow grease on making it shine but it's worth it.
Surprised to see that the mop sink will be required to be behind the bar... I know this is often in a mop closet or corner of a kitchen area. They can be stinky, and would suck to have in your bar area.

Your actual part expenses should be pretty easy to define, and strike me as being a $1-2k tops (just from memory, without looking anything up). To Cedric's point, a 3-compartment sink should be easy to find used. I never found one that was less than a new one so went with a new... find out new prices before you buy used!

The "installed" portion of the question is far more significant. You will get widely varying responses from plumbers you contact. We had 4-5 plumbers bid on our upfit and some quotes came in at almost triple the lowest. Despite the water line location, if you are cutting concrete you are looking at significant expense vs just running supply and drain lines. If your costs are comparable to our area, I'd think in the $5-10k range for a rough estimate for the installation part.

Moral of the story - get several quotes... the more, the better.
Costs for the actual sinks will not break your budget. Depending on your menu and layout of the space, an additional hand sink and / or a prep sink may also be required. You may also want a dump sink in close proximity to your espresso station for added convenience. Brady brings up good points on the installation. Typically, your contractor will be responsible for installing the sinks and arranging for the plumber to make the final connections. This should all be included within your contractor’s bid for the entire build-out of your space, which may be in upwards of $100,000. The key is to provide complete and detailed information of what you want bid on. Different manufacturers have different models of sinks which may have different requirements. If you can provide the exact requirements for your particular needs, that will bring your various bids much closer together. On many occasions, contractors need to inflate their bid to account for “guesswork” – For instance, if the plumber providing your estimate is not told how many floor drains are needed and where they are located, he may plan for the worst case scenario which will inflate the bid.
