Does anyone know of any fantastic water towers that you could easily adjust water temperatures. I am planning to do manual pour overs, does anyone recommend having a small drip machine as well? Thanks

Bunn has a water tower that will maintain the water at boiling. You can't adjust the temp, though, but it doesn't take long for 212 degree water to cool down to 205.

As for a small drip I like the old Fetco 31Aap. They don't make them any more but they can be found online. You can put in the new fetco electronics so you have great control over the pour over time and the thermostat will let you crank up the water to 207 if you want. I don't like the small Bunn brewers. I think the thermostats are bad, don't get hot enough, are poorly made, and they cut you. Ask anybody who has ever worked on brewers, working on a Bunn means cut up hands. I don't know why but Fetcos don't do that. Just a few cents from my bowl full of pennies.
Have been using Bunn water towers for years and they're hard-working and dependable, but went with the Fetco tower for the new shop because of dimensional factors. Very impressed with the recovery time and flow rate of the Fetco, as well as the temperature programmability. So much so, that I'm considering replacing the Bunn at our espresso bar.
Curtis makes a tower that has a temp readout, and has automatic aeration. It's pretty easy to adjust the temperature too. You hold one button down for a few seconds, and then blip it up or down.
