Going to Portland (Oregon, that is) for 5 days next month to visit fam and am looking for some new places to check out.  Just any coffeehouse that roasts their own coffee and is doing something cool and different but is not overly hipster :)     

Opening our first coffeeshop in a couple months and am looking for some inspiration, and, of course, some delicious coffee!  Any tips would be appreciated :)

That's funny, I almost wrote "Anywhere but Stumptown." Not that it's not good, I'm just looking for something smaller and newer. Thanks for the tip though!
Coava Coffee Highly recommended from a chef - friend of mine in PDX.
While it's not a specific, set apart coffee shop, any trip to Powell's Bookstore in downtown Portland is a must. They have a coffee shop on their main level that serves pretty decent coffee as well!

Great list! I'd also add Coffeehouse Northwest (serving Stumptown and Sterling) and Sterling (run by the same folks), and Barista.

I feel like I'm missing some others, there are plenty in this city to keep you fully caffinated the whole time. Oh, if you're interested, Coffeehouse 5 does a free cupping Sundays at 3pm. They bring in whatever coffees they can, so there's usually a great variety. Near CH5 is Mr.Green Beans a new home roasting retail shop with all the supplies you might need.

I believe this is what your looking for Compass Coffee Roasting. Mike the owner is a BXer here. His Roaster is on 78th and St. Johns in Vancouver. Do check them out. If I'm still up to date he now owns Java Nation in Beaverton Oregon. His first location is on 13th and Main St. in Vancouver Washington. Just across the Interstate bridge. Not only does he have some great blends and roasts his Barista's are tops in the game.
Agree on Barista & Sterling, they are must go places for inspiration! I would like to add 2 more:

Heart for the best (scandinavian style) roasted coffee and IMPRESSIVE design http://heartroasters.com/

If you are in town on a saturday then visit the PSU Saturday Farmers Market for food/pastry inspiration and some brew coffee from Cafe Velos bike, when the market closes you can walk to Public Domain for their 2PM cupping.

If you haven't totally finalized the design it might be worth checking out the Ace Hotel location, cool hotel/coffee-shop set up.
