Ray's is in a cool neighborhood in Louisville, KY. Walk into the coffee shop and there is the roaster. There is no mistaking that the coffee is fresh here. Nimbus, the owner/roaster roasts only organic coffees. He and his wife are ardent activists and environmentalists. They serve only organic milk and vegan goodies.
I have not had a cap or latte here yet, the espresso and drip coffee were so good I just haven't gotten around to a milk drink yet. That says a lot, because I love my lattes and cappuccinos.
