2 things

i have people come in and want decaf. ive been able to pursuade a few to drink dark roasts instead because they appearantly have less caffeine, does anyone know what the difference really is? is there a substantial amount i can tell the customer? (i.e. yea, a dark roast has like 30 mg less caffeine on average, etc.) next question, what do you look for in a shot? i look for the cremas colour, the body, over all taste (not too bitter, etc.) but that all seems pretty basic. so i geuss im just wondering if im missing something. thanks alot. peace
