Im am installing a Diedrich ir-3 roaster in a new location, and I have a few questions about how to best ventilate the roaster. I can either do it through the wall with outside ducting or I can do it in to a chimney that is in the same room as the roaster. Is it safe to vent an Ir-3 directly into a chimney? The internal diameter in the chimney is 25 cm, it is approx. 7 meters high. It would be very easy going directly into the chimney, but will this reduce airflow? Anyone with experience? I have seen Giesen roasters ventilated this way, but the giesen have automatic adjusting of the airflow.
