You will get different answers, but, in my experience, they extract just the same.

It's more complex than that, because you'll probably find that a single works best with more than half the dose of the double...but, if one has 8 and the other has 16, and if the holes aren't worn out, they'll be about identical.

extraction times are how long the grounds are exposed to water and heat, yeah? To produce the best of the solubles, and to cut off the extraction before the undesireable solubles start to be extracted?

The extraction time should be pretty much the same. You want all of your coffee to be extracted to it's ideal, whether you're extracting six grams, or twenty one. Singles tend to shine because tall of the coffee gets extracted 'at the same time' than a puck which is sixteen-plus grams deep. If it takes two and a half seconds for coffee to make it's way from the headspace to dripping out of the basket, it stands to reason that the grounds at the top of the puck will have extracted a coupla seconds longer than the bottom, yeah?

Other than that minor anomaly, though, you'll want your single extractions and your doubles to run close to the same time. Twenty-five to thirty seconds.
