My shop is going to make the switch to all pour overs for drip coffee. We do not yet have a hot water tower, so we will most likely use an induction plate with a Hario kettle to heat the water. Does anyone know the wattage that is needed to to run this type of operation successfully. We will brew chemexes into airpots until we get the tower so as not to lose customers because we are running too slow. If you are already using an induction plate in tour bar flow it would be interesting to hear about it and how long it takes to heat up the water. I know most use this as a means to keep the water hot. Thanks for any input.
