I'm moving to the Seattle metro area in about a month, probably around Kent or Auburn. I already know roasters with shops I love in Seattle (Lighthouse, Zoka, Stumptown, and Hines, before they left) but I haven't seen or heard much about roasters or 3rd wave quality shops south of Seattle. Most of what I've read about there sounds like Starbucks-level shops (or bikini espresso drive throughs!) Any recommendations down near where I'm headed?
