Hi, all. First post, and I want to thank everyone for the great discussions. I have profited from them.
Our shop uses a Rancilio Class 10, and I've noticed that the disperison screw invariably mars the (dry) puck. Today, I downdosed until it no longer did this, and found that 14 grams is the maximum one can use. A leveled and tamped portafilter will be marked prior to extraction.
Needless to say, this means you cannot use any leveling/re-distribution technique at all! This stinks. Any input?
