Southeastern dilema

So I have been working at the shop that I work at now for about 3 years, and it is time to move on. I have to be honest, I'd like to stay in the southeast but I'm not to terribly picky after that (Alabama, Georgia, one of the Carolina's, maybe even TN) I like the mountains so that would be a nice plus, but the biggest thing is finding a shop that completely into the coffee world. The kind of shop the researches their coffees, intensely training their baristas, and one that roasts their own coffee would be a major plus because I already do some roasting and would love to get further into that without abandoning the barista life. Anybody got any ideas or advice? I've done some research and found some shops that are really into coffee culture and the "third wave", but before I went after those I figured I ask my peers for any advice, any suggestions will be much appreciated.
