I am considering starting a mobile cafe cart. I'm looking to prepare 30+ basic hot and iced espresso based drinks hourly. Assuming baristas were not directly involved with order taking and working the register, how many barista should I expect to have per shift?

If the barista is not taking money or interacting with the customer, 2 minutes per drink is more than enough time for one barista. I run a mobile espresso business, and our busiest events can still be sucessfully managed with two people.
