Trying to project # of customers based on traffic??

Hi again; Thanks for the help Matt! Based on foot traffic of 750,000 per year (all ages--ferry terminal)---what would be a realistic "capture percenatage"? we will be selling specialty coffees, hot chocolate,as well as desert items and sandwiches thanks Stacey
