    I changed the picture to this one with the meerkat on my head. I've just been trying to make decisions about suppliers and equipment and everything. I'm really liking the caffe pronto coffee. Also leaning toward the La Marzocco machine. So much to decide! How is your project coming along?

    The bobbing pitcher is the one where people bob it up and down as they steam and froth the milk. Not the way it should be done. For a perfect milk texture, it's best the pitcher be as still as possible, with a good clockwise or counter clockwise swirling motion. Bobbing the pitcher up and down infuses air throughout the milk, making for a thicker foam throughout, which may be okay for a capp, but not for a mocha, or what I had, a latte.

    Hi Holly,
    Good to hear from you. Hope you had a nice trip to florida! We went to Mongolia and China in June. It was a disastrous trip as my husband ended up in a Mongolian hospital and we had to fly home on a lear jet for an operation. (He's fine now) And I came back to piles of work. My store is having a series of art shows during July, so had to get ready for that. The cafe is now painted, the floors are finished and the interior doors are installed and all lighting. Just waiting now for the cabinets, which are going in next week. I have a little crew to start with, and will train them as soon as the equipment is installed. Next week I'm going to Alaska with the fly girls!
    How is your cafe progressing? How is everything?

    That was Gary Horne from General Espresso Equipment. He is a super good guy. I am working with a guy right now getting ready to open in Sugarland. We should connect when I come down for training. I am based in Atlanta and am possibly looking to move to the Dallas area.

    Hey Holly, I'm glad to know you will be at the event. Bellville's square is a great location for coffee. I used to live in Monaville and my parents live in Hempstead. Newman's Bakery is a landmark stop for me when i travel to Austin.
