As far shop and skills go, I teach classes through our local college, espresso labs training at the SCAA events, In depth training for staff and wholesale accounts. Also has competed at the Millrock latte art contest, The Ultimate Barista Challenge. Taught and ran Espresso Specialists - Chefs' Espresso Lab. My skills extend form 15yrs. as a Chef, 7yrs of Roasting coffee, 5yrs. of owning and running a retail roaster and espresso bar. So, I can offer a very different perspective on training and drink development for competition or for service at your shop.

I have 15yrs as a Chef, I have been roasting coffee for seven years and has owned a Coffeehouse for the last 5 years in Westchester County N.Y. 30 min north of Manhattan. I teach classes from basic brewing to Latte art training.

I am not planning to attend any of the retail coffee shows, as my new position is in green coffee importing and it is difficult to be out of the office when the market is open. I am hoping to be able to visit your shop in NY soon, as my office is in Norwood, NJ.
W may have met at one of the Roaster's Guilds but I know you more from Bruno's tales of your quest in Minneapolis.

Oh, man - I just tried your Mexico yesterday with chris d. we were cupping the coffees that are going to be featured in the judge's dinner. anyway, it's amazing. i just kept saying, "wow...wow.." it's beautiful.
holy shit. yeah i ride a KTM 300 MXC (2 stroke) and i had been ridin 4 stroke all my life, the squirelliness is out of control! Luckily, i don't have such crazy stories...yet.

Awesome, sounds great. Regional is Feb. 6 in pittsburgh. So in Nov. i'm trying to get a lot of background info, then getting in full swing in Dec. Any days of the week better to stop down?
