About Me:
Born and raised in beautiful Victoria, British Columbia. I’m fortunate to be raised in our wonderful industry. My father started a coffee company in 1973 when coffee wasn’t coffee as we know it today. He did very well over the years focusing on quality and service. My brother and I have been working with him since we were little punks. I’m completely in love with coffee and everything that goes along with it. I’m a passionate student and teacher of our trade. I’m an advocate of revolution to the way coffee is approached! From seed to cup! I praise those who battle the norm on a daily basis, re inventing our industry.
That sounded like my religion is coffee.
I also play competitive rugby for the oldest and most successful rugby club in North America, James Bay Athletic Association est.1886.
I like all water sports from bare footing to wake boarding. I was a competitive water ski jumper at the age of 15.
I love golf (not sure if its mutual).
I have an amazing girlfriend.
I ride loud fast bikes.
I’m an advocate for sustainability and accountability.
Love the environment 
Oh yeah tea kicks ass too.

I called your office today and asked about PacSoy but the person on the phone couldn't find it on your product list. She seemed pretty flustered when I called; said she was filling in. I was going to call you but it got busy.
Send me a case when the sleeves come out this week - and it doesn't have to be a sample, bill me for it.
    Thanks,
  • Banks Thomas

Thanks, I hope to make it to the island soon.

J.P. - I use a standard brew ratio of 3.75 oz coffee per 60 fl-oz. water I broke it out into grams and it equates to about 1.64 grams per 1 fl-oz. If you don's have a scale you can estimate about 1 tbsp per 5 fl-oz of water. I use a med fine grind for the coffee and brew as follows:
    1. boil water
    2. grind coffee fresh
    3. add to coffee to filter, pour enough water (right off boil ~200-205 degrees) in to wet grinds and wait 5-10 sec for bloom.
    4. add rest of water
    5. stir grounds in filter
    6. when fully brewed serve immediately or out into a thermal carafe
    I hope this helps. Cheers

Hey J.P. i am guessing Canada will be there, so it would be a good excuse to pop down and to support your team. Also...kiwi coffee (and cafe) culture is legendary. It would be a great chance to combine work and play. If... you timed your Ethiopian trip right, Emirates flies daily from Dubai via Sydney down to Auckland...

Nice to see you and your lovely companion today.
The "Slayer" looks like a beautiful piece of work to play with.
Give me a heads up when the first one goes in,
I'd be chuffed to help you Christen it.
  • Stickman

Hi JP. Won't see you at CoffeeFest this year: no passport! I just realized that it expired and I doubt there's time.
    Got any green beans available?!
