Melbourne and Sydney should probably be your first points of contact. Much of the modern specialty coffee and cafe movement came out of Melbourne and was fusion-ised somewhat in Sydney. There is a very good book on the cafes of Sydney, "Sydney Good Coffee Guide" (or similar name) available from Dymocks Bookstores anywhere in Australia. Can recommend a few places if you like
