The Slayer, they are not ROCK Band. They are ROCK espresso machine for "the best result in the cup"

Slayer: Some compare to other brands!

Recently some commentators have lumped Slayer into a category with La Marzocco and Synesso. I don’t really mind this, because the comparison reflects the fact that Slayer defines a new category of equipment: ultra-traditionals. These other machines play in the premium range, but Slayer is perhaps the first purpose-built machine for the Third Wave. It is by design the ultimate traditional barista… Continue

the difference between a "full" E61 machine and machine with E61 group head

Posted on April 28, 2009 at 7:50am 0 Comments

A "full" or complete E61 group refers to the "leva" versions of the machines - they have the E61 grouphead, the pre-infusion chamber (the chrome cylindrical shape below the grouphead) and the manual lever for operating the brew cycle on the right side of the group. The machines that only have the E61 grouphead have just that, the grouphead, but lack the pre-infusion chamber and the manual lever (they have a button or a keypad of some sort instead).

All of the machines such as Giotto,… Continue

AMERICAN GANGSTER LESSON FIVE: The Loudest is the Weakest

Posted on April 27, 2009 at 7:50am 0 Comments

Setting the Scene:

The big city street life was new to Frank Lucas’ brothers and cousins. They were used to country life in the backwoods of North Carolina before being recruited into Lucas’ drug empire. Once in the game, these young men had instant status and inordinate wealth thrust upon them. It’s hard to stay humble when fame and fortune comes so easily.

Huey Lucas, Frank’s oldest brother, became friends with the flamboyant and always dapper Nicky Barnes. Soon after… Continue

AMERICAN GANGSTER- LESSON THREE: Brand Dilution

Posted on April 27, 2009 at 7:44am 0 Comments

Setting the Scene:

Frank Lucas’ “Blue Magic” heroin became the market leader in New York City. Rivals said he had “upended the natural order of things” by selling heroin that is twice as good for half as much. Competitors left the heroin market because “nobody wants to compete with a monopoly.”

To accelerate growth of the “Blue Magic” business, Frank arranged wholesale distribution agreements with other drug lords and mafia families. This shift in business strategy made… Continue

Hi can you please tell me what time you went to ZanZbar when the espresso was bad, and who was the person making it?

And please, please send the coffee back and ask for another one, it is the only way they will improve.

Thanks!

Hi and thanks for the comments.

When ever you get a bad coffee at Kita or ZanZbar, please call me or tx me right away. I want every coffee to be good.

If you pick up a Dine Out guide for free in Phnom Penh you will find these cafes.

thanks!

Hey good to hear from you!

Well, try Corner 33 cafe, Java cafe, Cafe Fresco.

As you know it all depends on the barista working at the time you go.

If you go to Corner 33 Cafe, or Java Cafe, and the espresso is not good, please send it back and ask for another one.

Have you been back to Kita Coffee House on 39 Nguyen Hue, or ZanZbar? Once again if the espresso is not ideal, send it back and tell me about it.

Thanks,

Nat

Hi and thanks for your message. Well i try my best to instill correct barista techniques at those 2 places especially because they both use good machines. 90% of the time unfortunately the Vietnamese staff do not cafe. But those 2 places are better than most. Go to ZanZbar after 11am. Ask to speak to Vinh. he is the head bartender/barista and is passionate. Tell him that you know me, and that sometimes the espresso is sour. Please if it is ever sour, send it back and tell them why. I am in Pnhom Penh barista training this week. When I get back we will go to ZanZbar and Kita together. Often the staff at Kita are not dilligent. The key to espresso is always adjusting the grind. They often do not do this.

Thanks.

Ok Hung, is the max doserless? Where can I see a photo of it?

If you want to drink quality espresso to appreciate the quality of the machine you will buy then I suggest you will have to order quality beans from Australia/NewZealand. If you use Gloria Jeans and Coffee Bean, it will not do your machines justice.

I am glad you are an espresso Geek. I suggest to take a trip one day to Australia and I can recommend some fantastic cafes.
