For several years (at home and commercially) I've been using a simple Taylor TempRite digital thermometer. I calibrate it every now and then (maybe monthly) and it works fine. I have had clouding/fogging issues when it gets splashed, but it fades away. I'd like it to be totally waterproof, but it is what it is.
As a backup I recently bought an "Acu-Rite" digital thermometer. Not sure if Taylor makes it, but it is pretty much waterproof and has push buttons instead of the slide switches. Only downfall is that it's a wee bit slower on reaching temperature compared to the Taylor I've been using for awhile. But it is much faster than the typical analog-type thermometers most often used.
I also believe in using thermometers to ensure consistency as some of our customers are temperature- specific and this is very important when steaming milk for children.
