which do you prefer to put along side espresso when serving/drinking?
i find when i have flat water after my espresso it soothes my palate a little more so than sparkling water does....

Sparkling before to cleanse the palate, flat after.
In my experience, still water enhances the aftertaste of the espresso, whereas sparkling water all but kills it. I prefer to enhance the experience of the coffee.
While I agree with sparkling to cleanse the palate, the question was "which one".. not to mention, if the coffee is a bit on the too-fresh side, sparkling water as an "apertif" to the espresso might negatively effect the taste experience. Just my opinion, of course.
