Simple solution....Charge for the double. Then it is not you wasting the shot it would be your customer. Either way you are getting the cost investment out of it. The other option would be to put two grinders on the bar. One for singles and one for doubles but that would be a lot of coffee to pull off the initial investment. In my opinion the always double method has worked well. Your barista will be trained to pull the same shot over and over again and will know it is their mistake if the coffee is off and not be able to blame it on the basket. Unfortunately I don't think I will be able to participate in the "Barista Exchange" program, the fine for having a non local working without a work permit is 100,000naf or Antillean Guilders (about $57,000) first offense and the possible loss of business permit. Of course with a fine like that, that would be the end of the business.
Now I wouldn't want that. Maybe just a visiting friend then. No money. Just an excuse to come out.
