i notice quite a few coffee houses that use the drip method where the brewed coffee goes straight into a thermal carafe for self service. can i utilize the same method for french press (bodum)? i would like to brew up several of the 12 cup bodums and keep it hot in a carafe for customers to draw from.

Sure you can, you just have to find a way to remove the sediment. There are a lot of opinions on how to do this. Chinois is my favorite.
to clarify a Chinois is a really fine strainer. Shaped like a Chineese hat, Chinois=Chinese in French.
Four Barrel in San Francisco does this...and it was excellent. They ground a small cup of beans for each french press, ground the beans into the FP and then added hotwater. Let sit for 4 mins or so, then stirred and pressed. They then funneled into a container for coffee orders. The contanier had a special section for hot water to keep the coffee hot as well.

Was wonderful.
And just to clarify why the sediment must be removed - if there are excess coffee grounds sitting in your carafe, they will continue to 'steep' the coffee causing it to oversteep. (I guess that's somewhat obvious though.)
