Tobacconist? Chocolatier? Why not set aside some room in the shop and set up a roaster with a cupping lab? In our shop we have that setup behind glass walls so people can see what we do and that we care, and then also the walls prevent the smell from permeating the shop...don't get me wrong, I absolutely love the smell of roasting, but others may not. We regularly have customers come into the room while we roast and it provides a great opportunity to teach them about the farm, the farmers, the roasting process, and divulge a little about why we do what we do. Customer education is one area in the coffee community that everyone struggles with. That is a unique and interesting way to get conversations going and promote educational discussions with those customers in the future. Something to think about.
