    awesome reply to the slow coffee discussion. i have a dream ... one day there will be slow coffee shops for lovers of coffee. i actually model my idea after the original starbucks and peets where they were more about selling quality coffee beans. later they started serving up brewed coffee in their shops and much later lattes and the like. but in the beginning they were true pioneers of slow coffee.

    i guess i'm sort of a free agent right now. i do some training at the local shop and will team up with my friend pulling shots at the local farmers market. i try to stay involved as much as i can here in the coffee comunity. its nice not being tied down.

    We are using Hario Halogen "Beam Heaters" from Japan for the siphon bar.

    Got a chunk o' new coffee in so I can start some tasting classes.
    Lots more coffee conversation has erupted in their midst.
