Vietnamese Coffee Popsicles
Popsicles are a wonderful summer treat, and for the coffee lover, this simple snack can be made with an old favorite. Vietnamese Coffee Popsicles offer a cool, refreshing break, as well as an afternoon energy boost. All you’ll need is:
- 2 cups hot French roast coffee
- 3/4 cup heavy cream
- 14 ounce can sweetened condensed milk, divided
- 3/4 teaspoon vanilla
To make the popsicles, place 2/3 of the sweetened condensed milk in a bowl with the hot coffee and stir until well blended. Allow the mixture to cool, then carefully pour into 12 popsicle molds filling them approximately 3/4 the way full. Place popsicles into the freezer and allow to freeze until slushy, which will take approximately 2 hours.
Meanwhile, mix heavy cream, 3 tablespoons sweetened condensed milk, and vanilla in a bowl. Once popsicles are slushy, spoon approximately 2 teaspoons of cream/milk/vanilla mixture into the holders and place popsicle sticks in the center of each treat. Freeze until solid and enjoy.
Espresso Chocolate Coffee Cake
Espresso Chocolate Coffee Cake makes the perfect summertime treat anytime of day by mixing coffee and chocolate to result in an absolutely divine cake.
For the cake you will need:
- 1/2 cup room temperature butter
- 3/4 cup sugar
- 2 large eggs
- 1 cup sour cream
- 2 teaspoons vanilla
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 cups flour
- 1/2 teaspoon salt
For the topping you will need:
- 1/3 cup sugar
- 6 ounces chocolate chips
- 1.5 teaspoons cinnamon
- 1 tablespoon espresso powder
To begin making your cake, preheat the oven to 350 degrees and heavily grease a 10 inch bundt pan. In a large mixing bowl thoroughly beat together butter and sugar, then add eggs one at a time mixing thoroughly in between each. At this time fold in sour cream, vanilla, salt, baking soda, baking powder, and flour.
Set the batter aside and in another bowl whisk together sugar, cinnamon, and espresso powder.
Pour half of the batter into the bundt pan, sprinkle half of the topping and half of the chocolate chips, pour the rest of the batter into the pan and top with the remaining topping and chocolate chips.
Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
